These knives are for the meat lovers and the one company that built its name on butcher shoops is Victorinox. They have some of the best and most knives related to meat processing. My favorited is their Victorinox 10 inch curved blade Cimeter. If you buy large cuts of meat or do your own burchering this is probably the most used of them all, chop like a cleaver and cut through large cuts of meat like butter.
The boning knife is justa as important, getting the meat away from the bone for soups or filleting in general, the American made Dexter Russell 7 inch fillet knife does an excellent job on this.
